Ingredients
1 1/2 cups pre-cooked white beans (or 1 can rinsed and strained)
4 leaves of kale, stem removed & loosely chopped
1 pint cherry tomatoes, halved
2 tbsp basil, finely chopped
1 garlic clove, pressed
1 tbsp extra virgin olive oil
1/4 tsp crushed red pepper (optional)
pepper & salt
Directions
Heat oil in a pan over medium heat. Add garlic and cherry tomatoes. Sprinkle with salt, pepper and crushed red pepper. Saute until tomatoes are soft, about 3-5 minutes. Stir in kale and cook until wilted, about 2-3 minutes.
Add white beans and cook until just heated through, about 1-2 minutes. Add additional salt and pepper to taste.
