Ingredients
1 cup Greek yogurt
1 cucumber, peeled, seeded and sliced
1 small garlic clove, minced
2 teaspoons fresh dill, minced
Lemon juice, salt and pepper to taste
Instructions
Place cucumber slices in a colander set over a bowl and sprinkle lightly with salt. Set aside for 20-30 minutes so that the water can be drawn out from the cucumbers. After they’ve purged most of their water, wipe off excess salt and pat dry. Place cucumbers, garlic and dill in the bowl of a food processor and quickly pulse until the cucumbers are finely chopped. (This can also be done by hand on a cutting board). Stir the cucumber mixture into the yogurt and season to taste with lemon juice, salt and pepper. Let sit in refrigerator for 1 hour to let flavors meld.
