Ingredients
6 large egg whites (1 cup)
1 large egg (beaten)
4oz turkey sausage or ham
1 handful fresh spinach
1/2 cup sliced mushrooms
1/3 cup onion, chopped
1 slice cheese
Instructions
Stir-fry turkey, onions and mushrooms with olive oil cooking spray on medium-high heat for 5 minutes or until they begin to brown. Add the spinach and stir for about 30 seconds, just until spinach becomes dark green and condensed.
Remove contents from the skillet and rinse skillet. Apply new coat of olive oil spray and return to medium-high heat. Add the beaten eggs. Wait a couple minutes until you see bubbles starting to form around the edge. Lift a portion and allow runny eggs on top to flow beneath. Do this in 3 or 4 places around the perimeter. After another minute when the bottom is solid again, flip the omelet.
After flipping the omelet, add the slice of cheese on top and then dump the sautéed mixture of veggies onto one half of the omelet. Fold the omelet over and enjoy!
