Ingredients
1/8-1/4 cup Extra-virgin olive oil
1 yellow onion diced
4 garlic cloves thinly (paper) sliced
3 tbsp fresh Thyme (or 1 TBS dried) chopped
3/4 tbsp Italian Seasoning
1/2 cup finely shredded carrots
1- 28oz (can or fresh) crushed tomatoes
salt to taste
Directions
Saute olive oil, onion and garlic till golden brown (8-10 min). Add Thyme, Italian Seasoning and carrots, till carrots are quite soft.
Add tomatoes, salt to taste. Simmer on low for 30 minutes or until thickened, stirring occasionally.
