Ingredients
5 large tomatoes, sliced, or the equivalent of cherry or grape tomatoes, halved, or a mixture
1 small onion, halved and thinly sliced
1 medium cucumber, peeled and thinly sliced
6 tablespoons white vinegar
2 tablespoons olive oil
Salt and freshly ground pepper, to taste (about 1/2 teaspoon salt and 1/4 teaspoon pepper)
Note: Try adding 1-6 tablespoons lemon juice (?)
Place the tomatoes, onions, and cucumbers in a serving bowl. Mix the remaining ingredients, pour over the tomato mixture, and stir. Cover the dish and refrigerate for a few hours to allow for the flavors to blend.
