Seared Scallops with Lemon & Tarragon

Ingredients: 
12 Sea Scallops
2 tbsp. Extra Virgin Olive Oil
3 tbsp. Brown Butter Ghee (or regular ghee), divided
Kosher Salt
1 tbsp. Chopped Tarragon
1 tbsp. Lemon Juice
2 Garlic Cloves, slices or crushed
Lemon wedges for serving

Instructions:

  1. Pat your scallops dry
  2. Season with Kosher Salt
  3. Heat a large skillet on high
  4. Add the oil and heat until it’s shimmering
  5. Place the scallops in the pan and sear them for 3 minutes on one side
  6. Add 1 tbsp of brown butter ghee and spoon over the scallops once melted
  7. Turn the scallops over and cook for another 2-3 minutes
  8. Remove the scallops from the pan and place them on a serving platter to rest
  9. Lower the heat of the pan to medium-high and add the other 2 tbsps of ghee
  10. Whisk in the garlic, lemon juice and tarragon and cook until tarragon is crispy and garlic is fragrant
  11. Pour over scallops and serve!
