Ingredients
1 cans of black refried beans
1 small can of chipotle peppers in adobo sauce
Chorizo – I used a small amount
large eggs… How ever many you want per person. I typically can only eat 2.
Tortillas- I do small flour ones
Manchago- or whatever cheese you want
Avocado
Chunky salsa
Instructions
Heated black beans in a large cast iron skillet – add just a little bit of water to thin out the beans. Cook on medium heat. Add the whole can of sauce from the peppers, than cut 3-4 peppers with scissors into the black beans. Add chili powder, cumin, coriander, cayenne pepper, garlic and onion powder to the black bean mix. A few dashes of each.
Cook the chorizo in another pan with just a small amount of olive oil. Once the chorizo is cooked – stir into black bean mix. Turn down to low heat.
Start on your eggs. Cook sunny side up.
Warm up tortillas in the microwave, wrapped loosely in a towel.
Serve!
