Ingredients
4-8 boneless skinless chicken breasts (or 1 rotisserie chicken)
Bay leaves
Peppercorn
1-2 onions
Celery
Red seedless grapes
Sliced almonds
Light mayo
Salt
Pepper
Instructions
Fill a deep pot with water, add the chicken with 2 halved onions, 3-5 bay leaves, salt and 2-3 tablespoons of whole peppercorns for flavor. Remove once cooked.
Let the chicken cool, then chop/shred.
Halve grapes (start off with less than you think – you can always add more). Add to chicken
Chop 1-3 stalks of celery. Add to salad
Add about 1/4 cup of sliced almonds
Add mayo. Start off with 1/4 of the jar, and add as desired. The chicken will absorb some of the mayo, so add just a few tablespoons extra so it doesn’t dry out.
Add salt and pepper for flavor (4-5 shakes each).
