Jenny’s Stuffed Zucchini

Ingredients
2 large zucchini
1/2 cup cottage cheese
sea salt + pepper to taste
1/2 lb ground beef (browned)
5 T breadcrumbs (optional)
1/4 cup fresh grated parmesan
1 cup marinara sauce

Cut zucchini lengthwise and scoop out insides. Combine 1/2 of insides and all ingredients except the cheese. Mix well. Spoon this filling into zucchini boats and top with cheese.

Place zucchini boats in baking dish and bake uncovered @ 350 F for 15-20 minutes.
