Makes about 8-10 servings (13×9 casserole dish)
Ingredients
1 lb ground beef
1-2 cloves garlic
onion powder to taste
32 oz pasta sauce
2T dried parsley
Sea salt + pepper to taste
32 oz cottage cheese
2 eggs
1/2 c grated parmesan
3 c shredded mozzarella cheese
9 lasagna noodles (cooked or no-boil option)
Instructions
Preheat oven to 350 F while boiling noodles (if necessary) and browning ground beef. Drain beef and then add garlic, onion powder, salt, pepper, pasta sauce.
Mix cottage cheese with eggs, 2 c mozzarella, 1/4 c parmesan, parsley.
Spray casserole dish. Layer meat sauce, noodles, cottage cheese, meat sauce, noodles, cottage cheese, meat sauce, mozzarella, noodles, meat sauce and top with remaining 1 c mozzarella and 1/4 c parmesan cheese.
Cover with foil and bake 45 minutes. Then remove foil and back another 10 minutes. Let stand 10 minutes and serve or freeze!
