Crockpot Chicken Curry

Prep Time: 10 minutes | Total Time: 4.25 hours (high heat), 8.25 hours (low heat)

Ingredients:
1-2 lbs – Boneless Chicken Breast
1 Onion (chopped)
1-2 Yukon Gold Potatoes (chopped)
1-2 cups Light Coconut Milk
5T Red Curry Paste

Instructions:
Chop onion and potatoes (no need to peel). Lay down chicken and then top with veggies and curry paste. Add 1 cup of water and cook on low for 8 hours or high for 4 hours.

Once finished, add coconut milk and let simmer for an additional 10 minutes.

Optionally, add Cilantro as a garnish and enjoy!
