CAPRESE SALAD SKEWERS WITH PESTO & BACON

Serves  10 (3 skewers each)

Ingredients

  • 10 oz Grape tomatoes (30 tomatoes)
  • 5 slices Bacon (cooked; each cut into 6 pieces)
  • 1/2 oz Fresh basil (30 leaves)
  • 10 oz Fresh mozzarella balls (minis; 30 pieces)
  • Toothpicks
  • 1/4 cup Basil pesto
  • 2 tbsp Olive oil
  • Black pepper (fresh)

Instructions

  1. Skewer the tomatoes, bacon pieces, fresh basil, and mozzarella balls onto the toothpicks, in that order. (You can fold any larger basil pieces as needed.)
  2. In a small bowl, whisk together the pesto and olive oil. If it’s still thick, thin out with more oil.
  3. Drizzle the pesto over the skewers. Top with fresh ground pepper.
