Serves 4
INGREDIENTS
2 cups of strawberries
2 cups of blueberries
3 cups greek yogurt
1 cup of natural rolled oats
½ cup of chopped almonds
2 tablespoons of flax seed
½ cup of natural shredded coconut
½ teaspoon of cinnamon
DIRECTIONS
1. Mix oats, coconut & almonds and spread on a baking sheet and bake in the oven for 20 minutes at 160°C (325°F) or use a non-stick pan and toast, stirring constantly to prevent burning.
2. Remove and stir in the cinnamon and flax seed.
3. Purée or gently mash the berries together.
4. In four parfait glasses, alternate layers of the berry mixture, yogurt and the toasted oats and coconut. Top with a strawberry!
