Avocado Egg Salad

Serves 1

Ingredients
2 eggs, hard boiled
1/4 avocado, finely chopped
1 tsp lemon juice
1 tablespoon boiled corn
2 cherry tomatoes chopped
1 tsp extra virgin olive oil
1-2 tsp yellow mustard
Salt + pepper to taste (optional)
1 slice bread, 1/2 whole wheat English muffin, Triscuit crackers (optional)

Instructions
Mix chopped avocado and lemon juce in a large bowl.
Combine it with other ingredients in the same bowl except tomato.
Serve on bread slices with chopped tomatoes.
