Apple Glazed Grilled Turkey Breast

Serves 8

INGREDIENTS
2 boneless turkey breast halves (approx. 2 pounds each)
Coconut oil
1 small red onion, coarsely chopped
1½ cups apple cider vinegar
1 cinnamon stick
¼ teaspoon of powdered Stevia
2 apples, peeled, cored, and coarsely chopped
2 tablespoons chopped fresh sage leaves
Freshly ground pepper

DIRECTIONS
1. Preheat the grill to medium-high.
2. Put all onion, cider vinegar, cinnamon stick and Stevia in a small pot and cook until soft, about 3 minutes. Stir in the chopped apples and cook until they are soft and the mixture is just thickened, about 10 minutes. Remove cinnamon stick and cool.
3. Place the apple mixture in a food processor or blender and add the sage. Blend until smooth. Add pepper to taste. Let cool to room temperature.
4. Rub the turkey breast with a little oil.
5. Brush with glaze and grill for 20 minutes, turn over and brush with glaze again and grill for 15 minutes.
6. Remove from the grill and brush with the remaining glaze.
7. Let rest for 15 minutes before slicing.
