Makes 12
INGREDIENTS
½ cup natural low fat yogurt
¾ cup of spelt flour
¼ cup of ground flax seed
Stevia or a tablespoon of honey
2/3 cup unsweetened applesauce
¼ cup of finely chopped figs
3 eggs
2 teaspoons of cinnamon
1 cup of chopped or flaked almonds
1 teaspoon aluminum-free baking powder
½ teaspoon baking soda
½ cup of ground rolled oats
DIRECTIONS
1. Preheat oven to 180°C (350°F).
2. Prepare muffin tins with a healthy cooking spray.
3. Mix yogurt, Stevia or honey, applesauce, and eggs.
4. Take a small amount and mix with baking powder and baking soda so they dissolve. Then add to the rest of the mixture and stir well.
5. Mix in the flour, oats, flaxseed, cinnamon, almonds and figs.
6. Spoon into muffin tin.
7. Bake for 25 minutes.
