Ingredients
1 medium-large sweet potato
½ cup almond milk
Pinch ground sea salt (optional)
Pinch ground black pepper
Directions
Place the diced sweet potato in a covered pan with water on medium-high heat and boil for 10-15 minutes or until tender. Drain and cool slightly. Add the almond milk and mash with a fork until a smooth consistency has been reached. Season with salt and pepper if desired.
