Almond Flour Bread

Ingredients
2 cups of Almond flour
2 teaspoons baking powder
2 bags of Stevia
1 cup of coconut milk
4 large eggs- separated
One pinch of salt

Directions
Preheat oven to 400F. Grease a regular muffin pan (that makes 12 muffins)
Mix all the ingredients except for the egg whites. The batter will be a little loose, but will thicken after a few minutes. If it’s too loose, add more almond flour.
Whisk the egg whites till you get stiff peaks.
Fold 1/3 in the mix, then add the rest.
Fold carefully but make sure it’s well blended.
Fill up the muffin pan 3/4.
Bake 15-20 min, depending on your oven.
Check with a tooth pick till it comes out dry.

You might have to add almond flour depending on the size of your eggs. When it cools down you can easily cut them in half.
