Ingredients:
- 1 cup cooked brown rice
- 1 cup canned black beans, rinsed and drained
- 2 tsp coconut oil
- Pinch of kosher salt
- 1/2 tsp. garlic powder
- 1/4 avocado, chopped
- 1/4 cup chopped tomatoes
Instructions:
Cook the rice and beans. Mix together and stir in coconut oil, salt and garlic powder. Finish by gently tossing in avocado and tomatoes. Enjoy!
