Salmon Rice & Corn

Ingredients:
4½oz salmon filet
Salt and pepper, to taste
1 teaspoon Sriracha
½ cup cooked white or brown rice
¼ cup organic corn
1 Persian cucumber, sliced

Method:
Heat oven to 400°F. Season the fish on both sides with salt and pepper. Spread Sriracha on top. Place on a baking sheet and bake for about 10 minutes, or until cooked through. Set to broil for 1 minute, if desired.
Heat the rice and corn stovetop in a microwave and season with salt and pepper.
Plate the dish with fish, rice, corn and cucumbers on the side.
