Spanish Rice Recipe

Ingredients

  • 2 cups long grain rice
  • 1/4 cup oil
  • 8 oz tomato sauce
  • 6 stems cilantro (optional)
  • 1 tsp salt
  • 1 tsp minced garlic
  • 4 cups water
  • 1 cube chicken flavored bouillon
  • dash cumin
  • dash garlic pepper

Instructions

  1. Heat oil in large frying pan on medium heat.
  2. Add rice and cook until golden brown.
  3. Add 1 chicken flavored bouillon cube to 4 cups water and microwave for 3 minutes.
  4. When rice is brown, add water, tomato sauce, salt, garlic, cumin and garlic pepper to pan.
  5. Stir and cover pan. Let simmer for 30-40 minutes or until all is cooked and there is no liquid left. Fluff before serving and ENJOY.

Using Leftover Rice

How to Make Spanish Rice using Leftover Rice – If you have steamed rice leftover from last night’s dinner, transform it easily into Spanish Rice with this simple recipe.

Ingredients
1 tablespoon vegetable oil
1/2 medium yellow onion, medium dice
2 garlic cloves, minced
2 tablespoons tomato paste
1 tablespoon cumin
1/2 tablespoon coriander
1 teaspoon smoked paprika
1/2 cup chicken broth
3 cups cooked rice (white or brown)
salt and pepper to taste

Instructions
Heat the oil in a medium or large pot and saute the onion for
5 minutes. Add the garlic, tomato paste, cumin, coriander,
and paprika and cook for one minute.
Stir in the chicken broth followed by the cooked rice. Reduce
the heat to medium low and allow the rice to absorb the
liquid and seasonings. Fluff the rice and season with
additional salt and pepper if needed.
*Feel free to add more broth if needed as well.
