Serves 4
INGREDIENTS
2 pounds (1 Kg) fresh baby carrots
1 tablespoon of honey
1/3 cup of unsweetened orange juice
3 teaspoons of grated ginger
1 teaspoon of zested orange rind
Freshly ground black pepper
DIRECTIONS
1. Put the carrots in a saucepan, cover with water and simmer until they are almost tender.
Remove carrots from the water and drain well.
2. Put the honey, juice, ginger and zest in the saucepan and warm through. Add the carrots
and cook gently until they are cooked.
3. Add a little freshly ground black pepper.
4. Serve immediately.
